Melt’s philosophy has three main characteristics: Firstly: our chocolates are fresh. Secondly: we want to maximise their health benefits and thirdly we want our customers to enjoy the theatre of chocolate. By bringing the kitchen to our chocolate shops we hope to give you insight into the fascinating and highly skilled elements of chocolate making.

We think the taste of fresh chocolates is sublime – unlike any chocolate you have ever tasted before. When the chocolates are fresh all the natural qualities of cream, butter and chocolate are at their best. Fresh chocolates do have a short shelf life and are best enjoyed within a couple of days -but this won’t be hard! This is why we have our kitchen actually in our shops. So you can see the chocolates being made and eat directly from the kitchen, just like you might do at your own home.

Secondly we believe Chocolate is the “elixir of life”. We want to maximise the health benefits found in chocolate. Not least because our family of six is Melt’s top customer. But don’t take our word for it. If its on the BBC it must be true. In the programme: Trust me I’m a Doctor Series 2 Episode 2, Doctor Chris Van Tulleken visited Melt in Ledbury Road, Notting Hill and announced to the world that Chocolate is good for you. According to him you “crave and adore” chocolate because it directly stimulates your brain with feelings of pleasure and happiness. This is due to the release of the hormone serotonin. But Chocolate is also good for you. Chocolate alongside the humble apple, is a superfood with a magic ingredient called a flavanols. Flavanols have been shown to reduce blood pressure. Flavanols can also help boost brain power and memory as it stimulates an increase of blood flow to the brain.

At Melt we have known this for along time: that cocoa has nearly twice as many antioxidants as red wine, and up to three times as many as green tea. The belief is that antioxidants may slow down or even prevent the development of certain diseases, ageing and reduce blood pressure. Chocolate contains 4 essential ingredients that make it one of the superfoods:

1. Magnesium: For the heart to be at its peak performance, it requires two minerals more than any other, magnesium and potassium. Cacao, of course, is a fantastic food source of heart-supporting magnesium.

2. Antioxidants: According to research, cacao beans are super-rich in antioxidant flavonols. Cacao is one of the richest sources of antioxidants of any food.

3. Phenylethylamine: is a chemical in cacao that increases the activity of neurotransmitters (brain chemicals) in parts of the brain that control our ability to pay attention and stay alert.

4. Anti-Depressant Properties of Cacao: Cacao is also a great source of serotonin, dopamine, and phenylethylamine, three well-studied neurotransmitters, which help alleviate depression. Cacao also contains anandamide which delivers blissful feelings and B vitamins, which are associated with brain health. Cacao is a natural prozac!

Thirdly we would like to teach you all about the wonderful world of chocolate. You may be a gourmet lover of wine or cheese but not chocolate. Chocolate actually has many more complex flavours than wine. Single origin estates with their distinctive beans types closely resemble the taste notes and complexity of wine. Only our chocolates are priced in a few pounds versus the many hundreds of pounds you can pay for fine wine.

Our Luxury chocolates are the “best in London” according to you – our customers. They are beautifully wrapped in designer packaging. Again we try and avoid plastic and ensure our packaging is natural and can be easily recycled.

We try and reduce food miles by also having kitchens in our shops in Notting Hill and Holland Park – reducing our food miles to the absolute minimum. So we should be proud that British chocolates can be considered among the best in the world – even ‘Le Monde’ admitted that our chocolates ranked with the best from France.
